The Stalk

Stag Hunting at its Finest

Glassing from a ridge, reading the wind, belly crawling through heather, and earning every shot the hard way. This is traditional Highland hunting — no fences, no high seats, no shortcuts.

You'll hunt across 7,000 acres of open hill and forestry in Sutherland, one of the last true wilderness areas in Britain. The terrain mixes open moorland with woodland, offering both technical close-range stalks and longer hill approaches across dramatic, wide-open ground.

At the end of the day, you head back to the lodge for a whisky by the fire and dinner with the family running the house.

Set deep in the Sutherland wilderness with no other building in sight for 20 miles. Featured on Channel 4's World's Most Secret Hotels. Run by archaeologists and feeling more like a private home than a hotel.

Picked up from Inverness Airport. Drive north through the Highlands with a stop en route if time allows. Arrive at the lodge for lunch, zero your rifle, discuss the plan with your guide. Three-course dinner at the lodge.

Traditional Scottish breakfast at the lodge. Packed lunch and out to the hill with your guide. Observers leave with a local tour guide for the day. Return for whisky by the fire and dinner.

Hunting with George

George Watkinson, founder of Griffin Sporting Club

Raised on the family farm in the south of England, George developed his fieldcraft early. After Durham University and six years as a management consultant in London, he moved to the Outer Hebrides to work as a professional deer hunter and fishing guide.

It was a handful of encouraging American clients who convinced him to start his own outfitter — and Griffin Sporting Club was born to deliver traditional, hosted British fieldsports to visiting hunters.

FAQ

Common Questions

Do I need to bring my own rifle?

No — rifle, ammunition and licensing are all included. You're welcome to bring your own if you'd prefer; we'll help with the paperwork.

How do you ship trophies to the US?

We hand-deliver to our export partner, who manages USDA documentation and customs clearance. Trophies typically arrive at your door within 60 days of your hunt. Red and Sika are non-CITES — no special permits required. You pay the export company directly for shipping.

What's the success rate?

Very high. Sutherland is wild country, but with personal guiding across 7,000 acres and three full days on the hill, most parties leave with the stags they came for. We'll talk you through expectations honestly on a call.

Can my partner come if they don't hunt?

Absolutely. Observers stay at the lodge for $1,000, or add a sightseeing programme for $1,500 — guided day trips to castles, distilleries, beaches and Highland scenery while you're on the hill.

What's the fitness level needed?

Moderate. You'll be on your feet across uneven Highland terrain, sometimes for several hours. You don't need to be a mountaineer, but you should be comfortable walking 6-10 miles on rough ground.
